What is sourdough?
Sourdough is a type of bread that does not use commercial yeast, but rather a ‘natural leaven’ known as ‘starter’.
‘Starter’is a mix of fermenting dough that grow naturally. The sour flavour in the bread comes from the lactic acid in the starter.
Bakers often make loaves with fermented dough from a previous batch (which they call "mother dough", rather than making a new starter every time they bake). The original starter culture may be many years old.
Our mother dough was born in 2006.
A baker reads the weather, the flour, the levain, before starting to mix. A complex balance of bacteria, time, temperature, moisture, and fermentation acts on the simplest of ingredients; flour, water and salt, to create one of the most elemental foods since the beginning of life.
The process is ancient and intuitive. It is a combination of craft, science, art, passion and skill.

6 Reasons to Eat our Sourdough Bread.
1. Sourdough often has a lower glycemic index ‘GI’ so it doesn’t spike blood sugar as dramatically. This is because it depletes damaged starches within it, simply by its fermentative nature.
2. Sourdough bread contains the bacteria Lactobacillus in a higher proportion. More Lactobacillus means higher production of lactic acid, which means less of the potentially dangerous phytic acid. What does that mean? More mineral availability & easier digestion! Pre-digestion by sourdough = less digestion for you.
3. The fermentation process increases the content of beneficial bacteria in the bread and the gut. Healthy gut bacteria = happy body.
4. The Integrity of sourdough is so complex that it contains a host of goodness in terms of nutrients. In sourdough you can find vitamins B1-B6, B12, folate, thiamin, niacin, riboflavin, vitamin E, selenium, iron, manganese, calcium, magnesium, phosphorus, zinc and potassium - in addition to uniquely balanced proteins.
